Happy Pi Day!

I have been waiting for a year to make this! I am no good at making pie and probably should have fixed the placement of the numbers (that 1 is there if you couldn't see it) but this was way too fun for me! Are you celebrating pi day? Or taking a great mom educational moment that makes your kids roll their eyes at the holiday after thinking pi day is awesome because they get to eat pie for dessert? Yep,  I did that. :-)  I'd love to hear any other pi day celebration ideas!

Mom's Test Kitchen: Two Ingredient Cookies

So I'm sure that by now you have heard of these two ingredient cookies.  They were kind of all over a while ago.  People always kind of wrinkle their noses at the idea of cookies made with only two ingredients.  It does seem maybe not so great.  I mean that is why we keep adding more ingredients, right?  To improve the taste and quality of the cookies? No?

But me, loving anything that can make life simpler, figured it was at least worth a try.  So my daughter and I got ready to mash some bananas and get a little bit creative with some add-ins.  (Making them actually 2, 3, and 4 ingredient cookies.)  

We used three overripe bananas and quick cooking oats.  We combined half a banana and a quarter cup of quick cooking oats to make the first three (rather good size) cookies. In total we made five different types of cookies because we doubled up on the chocolate chip cookies.  We then put them in the oven on 350 for 15 minutes. 

When they were done we placed them on a plate and sat down to enjoy a taste test and hopefully a bit of a healthy, sweet treat.

1. Banana and Oat Cookies
Final Consensus - PASS
This is simply half a banana and a quarter cup of quick-cooking oats mashed together and then put in the oven at 350 for 15 minutes.
Taste Test Results
My little lady replied that they were "good."
I thought they were slightly plain, but good.  They would be something reasonable to have as a grab and go for breakfast.

2. Add Raisins and Almonds
Final Consensus - FAIL
So we did the exact same as in number one, but once the oats and banana were mashed together we stirred in some raisins and sliced almonds before putting it in the oven.
Taste Test Results
My little lady said they were "crunchy, but good."  I don't know but I don't think she sounded too enthusiastic when she said that.
I thought that we must have put in way to many raisins because the raisin taste was so strong. Perhaps with some slight alteration, these could be quite tasty.

3. Add Chocolate Chips
Final Consensus - YUMMY
Knowing how popular chocolate chips are around my house I doubled the amount of these.  I used a whole banana and half a cup of quick cooking oats.  Then I continued the same as above but stirred in a handful and a half (half a cup?) of chocolate chips prior to baking.
Taste Test Results
My daughter: "Delicioso. Tummy Like."  I think that means it was yummy.
My son said that picking the chocolate chips out of it and eating it
I thought that they were really quite tasty.  They tasted very much like...well, chocolate chips. The test I was waiting to see was: Is it just making un-healthy a healthy cookie/breakfast option? or Is it making healthier an otherwise unhealthy snack?

4. Add a drop of vanilla
Final Consensus - FAIL
I added a drop of vanilla to the other ingredients in their original amounts while I was mashing them together.  That's the only difference.  
Taste Test Results
The little lady claimed she "liked it."  I'm starting to see a pattern.  Is she just trying to humor me here?
I didn't like these ones at all. That is all.

5. Add a half teaspoon of peanut butter.
Final Consensus - FAIL
So while we were mashing the half banana and oats, we added somewhere around a half teaspoon of peanut butter.
Taste Test Results
Little lady said that the peanut butter flavor was a little strong.
I'm not a peanut butter fan so the strong peanut butter taste was so off putting to me.  It was not good.  Maybe if we put a lot less peanut butter and added something like chocolate chips (I'm just getting less and less healthy here aren't I?) it might be tasty.  Could use some reworking.

All in all, I think that the chocolate chip ones were the best and I have already made them again with some more overripe bananas.  We quite enjoy them and my daughter is thrilled that I now let her take a few cookies to school for snack time without any hesitation.  She even took one to go with her breakfast a couple times.

So definitely make them and definitely throw in a few chocolate chips.
